Sloppy Joe Sweet Potato Boats

what you’ll need:

  • 2 medium sweet potatoes, sliced lengthwise into 1-inch slices

  • 1lb ground beef

  • 1 tbsp avocado oil

  • 1/2 small yellow onion, diced

  • 1 green bell pepper, diced

  • 3/4 cup ketchup

  • 1/4 cup Worcestershire sauce

  • 2 tbsp brown sugar

  • 1 tbsp apple cider vinegar

  • 1 tbsp Dijon mustard

  • 1 tsp smoked paprika

  • 1/2 tsp chili powder

  • 1/2 tsp salt

  • 1/2 tsp black pepper

  • 1 tsp garlic powder

  • 6-8oz shredded mozzarella cheese

    optional toppings:

  • pickle slices

  • pickled red onion

  • pickled jalapeños

Instructions:

  1. Start by preheating your oven to 400 degrees.

  2. Poke holes with a fork into both of your sweet potatoes. Place in the microwave for 2 minutes. This will make the cutting process much easier.

  3. Once out of the microwave, slice the sweet potato into 1-inch thick slices lengthwise. I usually get about 4-5 slices of each sweet potato. Add to a baking sheet, spray with some avocado oil, and season with some salt and pepper. Place in the oven for 20-25 minutes until they can easily be pierced with a fork.

  4. Meanwhile, prep the sloppy joe meat mixture. Preheat a large pan to medium-high heat. Add the avocado oil and then the ground beef. Cook for 7-10 minutes until fully cooked. 

  5. Once the meat has cooked, add the diced bell pepper and onion. Saute for 3-5 minutes until soft. 

  6. Next, add the ketchup, worcestershire, apple cider vinegar, brown sugar, dijon mustard, and seasonings. Mix well and bring to a low simmer. Simmer for 5-10 minutes until the sweet potatoes are ready. Taste the mixture and add salt & pepper as necessary. 

  7. Once the sweet potatoes are done, place the cooked meat mixture on top of the sweet potatoes and sprinkle with cheese. Put them back in the oven for about 5 minutes until the cheese melts.

  8. Broil for the last minute or so until the cheese starts to get brown. 

  9. Serve immediately with your favorite toppings! I chose some pickled red onions & pickled jalapenos. Enjoy!
