Spaghetti Squash Marinara Boats

what you’ll need:
2 large spaghetti squash
1.5lb ground turkey
1 16oz jar Rao’s marinara
1 yellow onion
Breadcrumbs (I found cauliflower breadcrumbs!)
Butter
Raw sharp cheddar cheese
Minced garlic
Italian seasoning
Salt & pepper
Olive oil
Instructions:
Preheat your oven to 400 degrees.
Cut your spaghetti squash in half and scoop out all of the seeds. Drizzle on some olive oil, salt, & pepper and turn facing down. Place in the oven for about 40-45 min until soft and tender.
Meanwhile let’s make our meat mixture. You’re doing to add some oil to a pan on medium high heat, and add the ground turkey. Cook for about 5-7 min until brown. You’ll then add in 1 diced onion, 1 tbs Italian seasoning, and 1 tbs minced garlic and sauté for a few min. Then add your jar of marinara sauce and simmer. I like to let this simmer for 5-10 min on low to let the flavors come together.
While that’s simmering, prep your breadcrumb topping. I mixed 1 cup breadcrumbs, 2tbs melted butter, & 1/2 tbs Italian seasoning in a bowl and set aside.
Once you pull out the spaghetti squash add in some of the meat mixture, shredded cheese, & breadcrumbs on top and pop back in the oven for about 5 min until the cheese has melted and the breadcrumbs have gotten toasted! Season with salt and pepper as needed. Enjoy!
