Spinach Artichoke Stuffed Chicken

what you’ll need:
4 large chicken breasts
4 oz cream cheese
2 tbs sour cream
1 tsp minced garlic
4oz chopped artichoke hearts (from a jar)
1 cup chopped fresh spinach
1/3 cup mozzarella cheese
1/3 cup parmesan cheese
1 tsp paprika
1 tsp garlic powder
Sprinkle of salt and pepper
Avocado oil spray
Instructions:
Start off by preheating your oven to 350 degrees fahrenheit.
Place the chicken breasts onto a cutting board. Season the chicken on both sides with a sprinkle of salt, pepper, 1 tsp paprika, and 1 tsp garlic powder. Carefully slice the chicken through the middle creating a pocket for the filling. Make sure not the slice all the way through!
Next you’ll make the spinach artichoke filling. In a mixing bowl add in 4oz of cream cheese, 2 tbs of sour cream, 1/3 cup mozzarella cheese, 1/3 cup parmesan cheese, 1 tsp minced garlic, 1 cup finely chopped spinach, 4 oz of artichoke hearts finely chopped, and a sprinkle of salt. Place about 3 tbs of the mixture on the inside of each piece of chicken. Making sure not to overfill.
Preheat an oven safe skillet to medium high heat. Add on a spray of avocado oil and once hot add on the stuffed chicken breasts. Brown on each side for 3 minutes being really careful when turning over not to spill out any of the filling. Don’t worry about it being fully cooked. It will finish cooking in the oven.
Finally place the pan in the oven for about 15-20 minutes until the chicken is fully cooked.
Serve immediately with your favorite vegetable and enjoy!
