Spinach Artichoke Stuffed Chicken
Ingredients
- 4 large chicken breasts
- 4 oz cream cheese
- 2 tbsp sour cream
- 1 tsp minced garlic
- 4 oz jarred artichoke hearts chopped
- 1 cup fresh spinach, chopped
- 1/3 cup mozzarella cheese, shredded
- 1/3 cup parmesan cheese, grated
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
- Avocado spray oil
Instructions
- Preheat your oven to 350°F.
- Place the chicken breasts on a cutting board and season both sides with salt, pepper, paprika, and garlic powder. Using a sharp knife, carefully cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
- In a medium bowl, combine the cream cheese, sour cream, mozzarella, Parmesan, garlic, chopped spinach, chopped artichoke hearts, and a pinch of salt. Mix until well combined.
- Spoon the filling evenly into each chicken breast, being careful not to overfill them.
- Heat an oven-safe skillet over medium-high heat and lightly coat it with avocado oil. Add the stuffed chicken breasts and sear for about 3 minutes per side, carefully flipping them so the filling stays inside. The chicken does not need to be fully cooked at this stage.
- Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F.
- Let the chicken rest for a few minutes before serving with your favorite vegetables.
