Chicken Burrito Bowls With Chipotle Sauce

Makes 4 Servings

What You’ll Need:

  • 1 lb chicken thighs or breast

  • 1 packet taco seasoning (I used Siete)

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 small yellow onion

  • Avocados (or premade guacamole)

  • 1 small red onion

  • Salsa of choice

  • 1 can black beans

  • 2 bags of microwave brown rice (I like to use microwave rice to make my life easier)

For the Chipotle Sauce:

  • Juice of 1/2 lime

  • 1 handful of cilantro

  • 1/2 cup greek yogurt

  • 1 can chipotle peppers in adobo sauce

  • 1 tbs minced garlic

    Instructions:

    1. Season the chicken with taco seasoning. I used almost a full packet of taco seasoning! Add avocado oil to a skillet on medium high heat. Once hot add the chicken and cook for 5-7 min per side until fully cooked. Once finished you’ll let it rest for a few min then cut into bite size pieces.

    2. Once the chicken is out of the pan I like to add the sliced onion and bell peppers to the same pan (less dishes + flavor from the chicken!!) and sauté for about 7-10 min, until almost soft! I like the veggies to still have a bit of a crunch

    3. For the chipotle sauce, add to a blender add 1/2 cup plain greek yogurt, 1 pepper in adobo sauce + 2 tbs of the sauce, the juice of 1/2 lime, 1 handful of cilantro, and 1 tbsp of minced garlic. Blend on high until smooth.

    4. Assemble. To the tupperware, add in 1/2 cup cooked rice, cooked chicken, black beans, shredded lettuce, peppers + onion mix, salsa, guac, & top with the chipotle sauce! The amount of each item added to the bowls are up to you! Enjoy!

Italian Grinder Salad

Makes 4 servings

WHAT YOU’LL NEED:

  • 2 bags pre shredded romaine lettuce

  • Chopped bell pepper

  • Chopped cucumber

  • Chopped red onion

  • Chopped tomato

  • Jar of sliced pepperoncini

  • Sharp cheddar cheese

  • Chopped deli meat (chicken, ham, salami)

    For the dressing:

  • 4 tbs mayo

  • 1/4 tsp red pepper flakes

  • 1 tsp Italian seasoning

  • 4 tbs red wine vinegar

    INSTRUCTIONS:

    All all of your prepped salad ingredients to a tupperware. It’s up to you how much of each item you would like! For the dressing add all ingredients to a bowl and mix well.

    Make sure to store the dressing separately so the lettuce does not get soggy.
