Korean-Style Ground Turkey Bowls

Korean Style Ground Turkey Bowls

Makes 4 Servings

What You’ll Need:

  • 1lb ground turkey

  • 1/4 cup coconut aminos

  • 2 tbs chili garlic sauce or sriracha

  • 1 tbs sesame oil

  • 1 tsp minced garlic

  • 1 tsp ginger powder

  • 1 bag broccoli

  • 4 cups cauliflower rice

  • Sliced green onions

  • 2 tbs Sriracha

  • 2 tbs mayo

    Instructions:

    Preheat a pan to medium high heat. Add your ground turkey and cook for 7-10 minutes until brown.

    While the ground turkey cooks make the sauce. Mix together 1/4 cup coconut aminos, 2 tbs chili garlic sauce, 1 tbs sesame oil, 1 tsp minced garlic, and 1 tsp ginger powder.

    Add the sauce to the pan with the ground turkey and mix well. Let this simmer for a few mintues to let the flavors come together.

    To make the sriracha mayo mix together 1 tbs of mayo and 1 tbs of sriracha.

    In each meal prep container I added 1 cup broccoli, 1 cup cauliflower rice, and the ground turkey. Then topped with a sprinkle of chopped green onion and 1 tbs of the sriracha mayo.


Balsamic Chicken Caprese Salad

Makes 4 servings

WHAT YOU’LL NEED:

  • Chicken Marinade

    • 1 1/2 lb Chicken breast

    • 1/2 cup balsamic vinegar

    • 2 tbs olive oil

    • 2 tsp italian seasoning

    • 2 tsp dijon mustard

    • 1 tsp garlic powder

    • Pinch of salt & pepper

  • In the Salad

    • Mixed greens

    • Sliced grape tomatoes

    • Mozzarella balls

    • Sliced green onion

    • Balsamic glaze

    INSTRUCTIONS:

    First things first is to marinate the chicken. In a bowl mix together the balsamic vinegar, olive oil, mustard, italian seasoning, garlic powder, salt, and pepper. Then add the chicken to a bowl, tupperware, or zip lock bag and pour the marinade over the chicken. Mix well so that the chicken is fully coated. Place in the fridge for at least 30 minutes to marinate.

    Once the chicken has been marinated it’s time to cook! Preheat the pan to medium high heat and add the chicken as well as the marinade. Cook for about 7 minutes perside until the chicken is fully cooked. The marinade should evaporate and the chicken will get a nice char.

    While the chicken is cooking slice up your grape tomatoes, mozzarella cheese balls, green onion, and avocado. Once the chicken is finished it’s time to assemble! To you meal prep container add in some mixed greens, the balsamic chicken, and all your prepped toppings. Finish it off with a drizzle of balsamic glaze and enjoy!

    Note* If you’d like, you can use a balsamic vinaigrette dressing if you don’t have balsamic glaze. I would recommend putting the dressing on the side to keep the lettuce crisp!


Cheesy Bacon & Egg Bites

Makes 12 egg bites

WHAT you’ll need:

  • 8 eggs

  • 1/3 cup Egg whites

  • 1/2 cup Unsweetened plain almond milk

  • 1 small shallot chopped & sautéed

  • 8 pieces of bacon, cooked into bacon bits

  • 1/2 cup shredded Gruyère cheese

  • 1 tbs Hot sauce of choice

  • 1/2 tsp Garlic powder

  • 1/2 tsp Onion powder

  • Sprinkle of salt & pepper

    INSTRUCTIONS:

    Start by preheating your oven to 350 degrees.

    Next preheat a large pan to medium high heat. Cut the bacon into pieces and add to the pan. Cook about 5-7 minutes until the bacon has become nice and crisp. Remove from the pan and set aside. While the bacon is cooking finely chop the shallot. You’ll then preheat a small pan to a medium heat. Add in 1 tbs of the leftover bacon grease to the pan then add in the chopped shallots and saute about 1 minute until they become translucent.

    In a large mixing bowl add the eggs, egg whites, milk, hot sauce and seasonings and mix really well. Then pour in the bacon bits, sauteed shallots, and shredded cheese and give it a gentle mix.

    Evenly pour the egg mixture into a greased muffin tin and bake for 25 minutes or until fully cooked. You can store these in the fridge for 3-4 days but if you plan on keeping them for longer I suggest you freeze them.
