This Creamy Kielbasa & Potato Soup combines smoky kielbasa, tender potatoes, carrots, celery, and onion in a rich, velvety broth made with a simple roux and half & half. It's an easy, family-friendly comfort food recipe that's perfect for cozy weeknight dinners or chilly weekends.
Preheat a large pot over medium heat. Add a small splash of oil if needed, then add the sliced kielbasa. Sauté for 4-5 minutes until the edges are golden.
In the same pot, add the diced onion, carrots, and celery. Cook for about 5 minutes until softened. Add the garlic and cook for 1 more minute until fragrant.
Sprinkle the flour over the veggies and sausage and stir well for 1-2 minutes to absorb any excess oil. Add the butter and mix again.
Pour in the chicken broth, diced potatoes, salt, pepper, paprika, and onion powder. Bring to a boil, then reduce to a simmer and cook for about 15 minutes, or until the potatoes are tender.
