These jerk shrimp skewers are a bold, spicy-sweet dish with shrimp, pineapple, and peppers coated in jerk seasoning. Served over brown rice and finished with hot sauce, they balance heat, sweetness, and fresh flavor.

1 lb shrimp 1 red bell pepper, cubed 1 green bell pepper, cubed 1/2 sweet onion, cubed 1 can pineapple chunks 1 cup brown rice, cooked 1 tsp garlic powder 1 tsp onion powder 1/2 tsp paprika 1/2 tsp salt 1/4 tsp black pepper 1 tsp cayenne pepper 1/4 tsp red pepper flakes 1 tbsp olive oil
To make the seasoning, mix together garlic powder, onion powder, paprika, salt, black pepper, cayenne pepper, and red pepper flakes.
Add shrimp, chopped peppers, onion, and pineapple to a bowl. Drizzle with olive oil and add the seasoning.
Mix well and add to skewers in any order you'd like. Cook on a grill at 350 for about 5-7 minutes, flipping halfway through.
Once cooked, add it to your bowl with rice and top with hot sauce of choice.
