Juicy marinated chicken thighs, caramelized onions, and warm shawarma spices come together in this easy Sheet Pan Chicken Shawarma for a flavorful one-pan dinner. It's perfect for serving in pita, over rice, or in fresh salad bowls with cucumbers, tomatoes, feta, and creamy sauces like tzatziki or hummus.
In a small bowl, add the lemon juice, shawarma seasoning, garlic, and olive oil. Mix well.
Place the chicken thighs in a large bowl or zip-lock bag.
Pour the marinade over the chicken and mix until well incorporated. Refrigerate and let marinate for at least 30 minutes, or up to 24 hours.
Once you're ready to cook, preheat the oven to 400℉.
Place the chicken on a foil-lined sheet pan and add the chopped red onions.
Cook for about 15-20 minutes or until the internal temperature reaches 165 degrees. I like to broil mine at the end to give it some extra color!
