Shrimp Tacos

Taco Tuesday has some serious competition. These Shrimp Tacos are filled with perfectly seasoned shrimp, crunchy slaw, creamy avocado, and a spicy homemade sauce that you'll want to drizzle on everything. They're fresh, full of flavor, and come together fast enough for even the busiest weeknights.

Ingredients

  • 1 lb shrimp
  • 1 taco seasoning packet
  • 6 medium size tortillas
  • 1 tbsp avocado oil

For the sauce

  • 1/4 cup mayo
  • 1/4 cup sour cream
  • 1/2 lime, juiced
  • 2 1/2 tbsp sriracha
  • 1 tsp garlic powder
  • Salt to taste

Optional toppings

  • Sliced avocado
  • Cabbage slaw mix
  • Red onion, finely diced
  • Fresh cilantro, chopped
  • Squeeze of fresh lime juice

Instructions

  • Add the avocado oil to a pan on medium-high heat.
  • Add the peeled shrimp and 1 packet of taco seasoning of choice in a large bowl, then mix until the shrimp is fully coated.
  • Once the pan is hot, add the shrimp and cook for about 2-3 minutes on both sides until pink.
  • Add all the sauce ingredients to a small bowl, mix well, and set aside.
  • Next, heat up the tortillas in a pan on medium-high heat for about 30sec -1 min on each side or until your desired level of crispiness.
  • Into each taco, add the cooked shrimp, some cabbage slaw, sliced avocado, diced red onion, a drizzle of sauce, chopped cilantro, and a squeeze of fresh lime juice. Enjoy!
