If taco night needs a little refresh, these Sweet Potato Taco Boats are such a fun way to mix things up. They're loaded with seasoned turkey, melty cheese, and all your favorite taco toppings for an easy dinner that's hearty, flavorful, and perfect for busy weeknights.
Use a fork to poke a few holes in each sweet potato, then microwave them for 2 minutes. This softens them slightly and makes them much easier to slice.
Cut each sweet potato lengthwise into about 1-inch thick slices. You should get about 4-5 slices per potato, depending on the size.
Arrange the slices on a baking sheet, lightly spray with avocado oil, and season with salt, pepper, and garlic powder. Roast for 20-25 minutes, or until the sweet potatoes are fork tender.
While the sweet potatoes roast, cook the ground turkey in a large skillet over medium-high heat, breaking it up as it cooks. Once browned and cooked through, stir in your taco seasoning according to the package.
