Ingredients

For the meat marinade

  • 1 lb flank steak, cut thin & against the grain
  • 2 tbsp soy sauce
  • 1 tbsp avocado oil
  • 1 tbsp cornstarch

For the sauce

  • 1/3 cup low-sodium soy sauce
  • 1/3 cup beef stock
  • 2 tbsp brown sugar
  • 1/4 cup hoisin sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp minced garlic
  • Sprinkle of red pepper flakes, omit if you don't prefer spicy
  • 2 tsp cornstarch

For the bowl

  • White or brown rice
  • 1, 12 oz bag of broccoli
  • Green onions, sliced
  • Sesame seeds

Instructions

  • In a medium size bowl, add the thinly sliced beef. Then add 2 tbsp soy sauce, 1 tbsp of avocado oil, and 1 tbsp cornstarch. Mix well and set aside.
  • Add all the sauce ingredients to a small bowl and mix well, making sure the cornstarch is fully mixed in.
  • At this time, start cooking your broccoli. I bought a bag of microwave broccoli to make my life easier, but you can also steam it on the stove.
  • To make the broccoli on the stove, add about 1/4 inch of water to a large pan and bring it to a boil. Add the broccoli to the pan in an even layer, then cover. Let the broccoli steam for 3-5 minutes until it can be pierced with a fork. Do not overcook the broccoli; otherwise, it will get mushy!
  • Preheat a large pan to high heat and add 1 tbsp of avocado oil. Once hot, add the beef in a single layer and let it sit for around 3 minutes without touching it so it has a nice char.
  • Toss the beef and allow it to cook on the other side for around 2 minutes; just before the steak is finished, add the sauce and lower the temperature. Let it simmer for around 3-5 minutes until it's thickened and the meat has finished cooking.
  • Finally, add the cooked broccoli and mix well.
  • Serve over rice and top with green onion and sesame seeds. Enjoy!
