Heat the avocado oil in a large pot over medium-high heat. Add the chopped red onion, red bell pepper, and zucchini, and sauté for 5-7 minutes, or until the vegetables have softened.
Add the ground turkey and cook for another 5-7 minutes, breaking it up with a spoon as it cooks, until it's fully browned.
Stir in all of the seasonings, followed by the chicken stock, beans, crushed tomatoes, and tomato paste. Mix well until everything is fully combined.
