Heat the oil in a large Dutch oven or pot over medium-high heat. Add the ground chicken and cook for 5-7 minutes, breaking it apart as it browns.
Add the chopped onion, carrots, and celery to the pot. Sauté for about 5 minutes, or until the vegetables begin to soften.
