Heat a large oven-safe pot or skillet over medium heat and add the avocado oil. Once hot, add the ground chicken and cook for 5-7 minutes, breaking it apart as it cooks, until it's fully browned.
While the chicken cooks, dice the bell peppers and onion. Add them to the pot and sauté for 3-4 minutes, or until they begin to soften.
Stir in the garlic and uncooked rice, mixing well so everything is evenly combined. Cook for another 1-2 minutes to lightly toast the rice.
Add the tomato sauce, diced tomatoes, chicken stock, and seasonings. Stir well, bring the mixture to a boil, then cover and reduce the heat to low. Simmer for 20-25 minutes, or until the rice is tender and most of the liquid has been absorbed.
While the rice finishes cooking, preheat your oven to 400°F.
Once the rice is cooked, give everything a good stir and sprinkle the shredded cheddar cheese evenly over the top.
Transfer the pot to the oven and bake for 3-4 minutes, or until the cheese has melted. For a golden, bubbly top, broil for the last 1-2 minutes, watching closely.
Garnish with fresh parsley and serve warm.
