Ingredients

  • 1 lb chicken breast or thighs
  • 1/2 cup balsamic vinegar
  • 2 tbsp olive oil
  • 2 tsp italian seasoning
  • 2 tsp dijon mustard
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
For the Salad
  • 8 oz Mozzarella pearls
  • 4 cups Mixed greens
  • 10 grape tomatoes, halved
  • 2 green onions, sliced
  • Balsamic Vinaigrette

Instructions

  • In a bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper.
  • Place the chicken in a bowl, airtight container, or zip-lock bag and pour the marinade over the top. Toss until the chicken is well coated, then refrigerate for at least 30 minutes.
  • Once the chicken has marinated, heat a large skillet over medium-high heat. Add the chicken along with the marinade and cook for about 5-7 minutes per side, or until the chicken is fully cooked. As it cooks, the marinade will reduce and the chicken will develop a nice caramelized char.
  • Let the chicken rest for a few minutes, then slice it into strips.
  • To assemble the salad, add the mixed greens to a bowl and top with the sliced chicken, tomatoes, mozzarella, avocado, and green onions. Finish with a drizzle of balsamic dressing before serving.
