In a bowl, whisk together the balsamic vinegar, olive oil, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper.
Place the chicken in a bowl, airtight container, or zip-lock bag and pour the marinade over the top. Toss until the chicken is well coated, then refrigerate for at least 30 minutes.
Once the chicken has marinated, heat a large skillet over medium-high heat. Add the chicken along with the marinade and cook for about 5-7 minutes per side, or until the chicken is fully cooked. As it cooks, the marinade will reduce and the chicken will develop a nice caramelized char.
