Balsamic Chicken Cobb Salad

A delicious twist on the classic cobb salad, featuring a perfectly balanced mix of fresh greens, strawberry, creamy avocado, tomatoes, and our favorite balsamic chicken.

what you’ll need:

  • 1 lb Chicken thigh or breast

  • Mixed greens

  • Grape tomatoes

  • Cucumber

  • Strawberries

  • 1 Avocado

  • Green onion

  • Goat cheese

  • Hard boiled eggs

  • 1/2 cup balsamic

  • 2 tbs olive oil

  • 2 tsp brown mustard

  • 2 tsp Italian seasoning

  • 1 tsp garlic powder

  • Salt and pepper to taste

  • Dressing of choice (poppyseed, ranch, balsamic are all great options!)

Instructions:

To make the chicken we are first going to make the marinade! Mix together 1/2 cup balsamic, 2 tbs olive oil, 2 tsp brown mustard, 2 tsp Italian seasoning, and 1 tsp garlic powder. Mix well.

Add the marinade in a bowl with the chicken, let sit for 30 minutes. Then cook on medium high for about 5-7 minutes on each side until chicken is cooked to 165.

Time to assemble the salad! The amount of each ingredient will depend on your personal preference.

Add mixed greens, sliced grape tomatoes, sliced cucumber, sliced strawberries, avocado, chopped green onion, goat cheese, hard boiled eggs, and your cooked balsamic chicken.

I had mine with poppyseed dressing but it would also go great with ranch or balsamic vinaigrette! Enjoy!
