what you’ll need:

  • 1 lb salmon

  • Mixed greens

  • Cucumber

  • Red onion

  • Grape tomato

  • Brown rice

  • Goat cheese

  • Kalamata olives

  • Avocado

  • 1/3 cup olive oil

  • 1/4 cup red wine vinegar

  • 1 tbs lemon juice

  • 1/2 tsp minced garlic

  • 1 tsp brown or dijon mustard

  • 1 tbs oregano

  • Salt & pepper to taste

Instructions:

SALMON MARINADE:

This recipe is per 1lb of salmon.

Mix together 3tbs olive oil, 1tbs lemon juice, 1tbs freshly chopped dill, 1tsp oregano, 1/2 tsp minced garlic, 1/2 tsp salt & pepper and brush onto the salmon.

Let it sit for about 15 to 20 minutes. Preheat oven to 400 and bake for about 12 min (depending on the thickness of the salmon) or until it reaches temp of 145.

GREEK VINAIGRETTE:

Mix together 1/3 cup olive oil, 1/4 cup red wine vinegar, 1 tbs lemon juice, 1/2 tsp minced garlic, 1 tsp brown or dijon mustard, 1 tbs oregano, Salt & pepper to taste.

Assemble:

The amount of each item will be based on personal preference!

To a bowl add in mixed greens, sliced cucumber, chopped red onion, sliced grape tomatoes, brown rice, goat cheese, avocado, kalamata olives, and the cooked salmon.

Top it off with your homemade greek vinaigrette and enjoy!
