Jerk Shrimp & Pineapple Kabobs

These jerk shrimp and pineapple kabobs are the perfect mix of sweet and spicy. You can pair with brown rice or omit for a low carb dinner option!

what you’ll need:

  • 1lb shrimp

  • 1 red bell pepper

  • 1 green bell pepper

  • 1/2 Sweet onion

  • 1 can pineapple chunks

  • Brown rice

  • 1 tsp garlic seasoning

  • 1 tsp onion powder

  • 1/2 tsp paprika

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tsp cayenne pepper

  • 1/4 tsp red pepper flakes

  • Olive oil

Instructions:

To make the jerk seasoning mix together 1 tsp garlic seasoning, 1 tsp onion powder, 1/2 tsp paprika, 1/2 tsp salt, 1/4 tsp black pepper, 1 tsp cayenne pepper, 1/4 tsp red pepper flakes.

Add shrimp, chopped peppers, onion, & pineapple to a bowl. Drizzle with olive oil and add jerk seasoning.

Mix well and add to skewers. Cook on a grill at 350 for about 5-7 min flipping halfway through. You can easily cook this on a stovetop or air fryer if you don’t have a grill.

Once cooked add it to your bowl with rice and top with hot sauce of choice. (My favorite is @melindasfoods ) The jerk seasoning is definitely spicy, so if you want it less spicy take out the red pepper flakes and use less cayenne pepper!
