Ingredients

  • 2 burrito size tortillas
  • 1/2 cup cheddar cheese
  • 1/2 cup black beans
  • 1/3 cup corn
  • 1/2 tbsp taco seasoning
  • 1/2 lime, juiced
  • 2 tbsp red onion, finely diced
  • Avocado oil spray

Instructions

  • In a medium bowl, combine the black beans, corn, taco seasoning, lime juice, and red onion. Mix until everything is evenly coated.
  • Lay one tortilla flat and sprinkle a layer of shredded cheese over the surface. Evenly spread the black bean and corn mixture on top, then finish with another layer of shredded cheese. Place the second tortilla on top.
  • Heat a large skillet over medium-high heat and lightly coat it with oil or cooking spray.
