Caprese Chicken Bake

This low carb caprese chicken bake is truly delicious. If you’re a fan of balsamic I promise you won’t be disappointed.

what you’ll need:

  • 2lbs chicken breast

  • 5 Roma tomatoes

  • Fresh basil

  • Mozzarella cheese

  • Balsamic vinegar

  • Balsamic glaze

  • Salt & pepper

Instructions:

Preheat your oven to 375

Take out your chicken and sliced them all in half lengthwise (to make them thinner and more even in size) its almost like butterflying chicken but you cut all the way through haha

Place your chicken on the bottom of a greased baking sheet and season with salt and pepper.

Meanwhile dice your tomatoes into small pieces and chop up your fresh basil. You’ll then add the chopped tomatoes and basil to a bowl along with 3 tbs balsamic vinegar, salt, & pepper.

Pour the tomato mixture on top of the chicken and spread evenly. Now top with your mozzarella cheese slices and bake in the oven for about 30-35 min until the chicken is fully cooked! Once it’s out of the oven top it with some balsamic glaze and more fresh basil! I served mine with some green beans. Enjoy!!

* notes after cooking this! I would probably choose to cook the chicken without the tomatoes and then add them towards the end! It made it a bit watery once it was finished. Still tasted good either way!
