Cilantro Lime Chicken with Peach Salsa
Ingredients
- 1 lb chicken thighs, cubed
- 2 tbsp avocado oil, divided
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- juice of 1/2 lime
- 2 tbsp cilantro, chopped
- Served with your choice of rice
For the peach salsa
- 2-3 large peaches, chopped
- 1 red bell pepper, chopped
- 1/2 red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1 jalapeno chopped & seeds removed
- Juice of 1/2 lime
- Salt to taste
Instructions
- Add all the chicken seasoning and 1 tbsp of avocado oil in a medium bowl and mix well.
- Preheat a large pan to medium-high heat and add 1 tbsp of avocado oil.
- Once hot, add the seasoned chicken and cook for 10-12 minutes, stirring occasionally, until fully cooked.
- While the chicken is cooking, chop up all the salsa ingredients and add to a medium-sized bowl.
- Add the juice of 1/2 lime and season with a sprinkle of salt. Mix everything together and taste. Add more lime juice or salt as needed.
- Once the chicken is cooked, turn off the heat and squeeze the juice of half a lime over it. Then top with the freshly chopped cilantro and mix.
- Serve the cilantro lime chicken over rice with the peach salsa and enjoy!
