Cilantro Lime Chicken with Peach Salsa

1 lb chicken thighs, cubed 2 tbsp avocado oil, divided 1 tsp salt 1/2 tsp pepper 1/2 tsp cumin 1 tsp paprika 1 tsp garlic powder juice of 1/2 lime 2 tbsp cilantro, chopped Served with your choice of rice For the peach salsa 2-3 large peaches, chopped 1 red bell pepper, chopped 1/2 red onion, finely chopped 2 tbsp fresh cilantro, chopped 1 jalapeno chopped & seeds removed Juice of 1/2 lime Salt to taste
Add all the chicken seasoning and 1 tbsp of avocado oil in a medium bowl and mix well.
Preheat a large pan to medium-high heat and add 1 tbsp of avocado oil.
Once hot, add the seasoned chicken and cook for 10-12 minutes, stirring occasionally, until fully cooked.
While the chicken is cooking, chop up all the salsa ingredients and add to a medium-sized bowl.
Add the juice of 1/2 lime and season with a sprinkle of salt. Mix everything together and taste. Add more lime juice or salt as needed.
Once the chicken is cooked, turn off the heat and squeeze the juice of half a lime over it. Then top with the freshly chopped cilantro and mix.
Serve the cilantro lime chicken over rice with the peach salsa and enjoy!
