Creamy Tortellini Soup

what you’ll need:

  • 1 lb Italian chicken sausage 

  • 1 small onion, diced

  • 2 stalks of celery, diced 

  • 2 small carrots, diced 

  • 1 tbsp minced garlic

  • 28 oz can fire roasted crushed tomatoes 

  • 14 oz can diced tomatoes 

  • 5 cups chicken stock

  • 1 tbsp Italian seasoning 

  • 1 tsp salt 

  • 1/2 tsp pepper 

  • 1/4 tsp red pepper flakes 

  • 1 tbsp avocado oil

  • 1 cup half and half 

  • 18 oz cheese tortellini  

  • 2 cups spinach

  • Freshly grated parmesan cheese (for garnish)

Instructions:

  1. To a large pot add 1 tbsp of avocado oil on medium-high heat.

  2. Add the Italian sausage and cook for about 7-10 minutes until fully cooked. 

  3. Next add the diced celery, carrots, and onion. Saute about 3 -4 minutes until the veggies begin to soften.

  4. Add the minced garlic and saute for another 2 minutes.

  5. Add the canned tomatoes, seasoning, and chicken stock, and give it a good mix. Bring to a boil. 

  6. Once boiling add the tortellini and cook according to the package instructions. Mine took about 4 minutes. 

  7. Remove from the heat and add the half and half as well as the spinach. Stir until the spinach has wilted.

  8. Serve with grated parmesan and enjoy!
