Creamy Tortellini Soup

what you’ll need:
1 lb Italian chicken sausage
1 small onion, diced
2 stalks of celery, diced
2 small carrots, diced
1 tbsp minced garlic
28 oz can fire roasted crushed tomatoes
14 oz can diced tomatoes
5 cups chicken stock
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp pepper
1/4 tsp red pepper flakes
1 tbsp avocado oil
1 cup half and half
18 oz cheese tortellini
2 cups spinach
Freshly grated parmesan cheese (for garnish)
Instructions:
To a large pot add 1 tbsp of avocado oil on medium-high heat.
Add the Italian sausage and cook for about 7-10 minutes until fully cooked.
Next add the diced celery, carrots, and onion. Saute about 3 -4 minutes until the veggies begin to soften.
Add the minced garlic and saute for another 2 minutes.
Add the canned tomatoes, seasoning, and chicken stock, and give it a good mix. Bring to a boil.
Once boiling add the tortellini and cook according to the package instructions. Mine took about 4 minutes.
Remove from the heat and add the half and half as well as the spinach. Stir until the spinach has wilted.
Serve with grated parmesan and enjoy!
