Lemon Chicken and Orzo Soup

what you’ll need:
1.5 lbs chicken breast
2 stalks of celery, diced
3 large carrots, sliced in rounds
1 small yellow onion, diced
2/3 cup whole wheat Orzo
6 cups chicken bone broth (I used Kettle & Fire)
1 tbsp flour
1 tbsp minced garlic
1/2 lemon juiced
1 tbsp Italian seasoning
1 tsp salt
1/2 tsp pepper
Fresh thyme
Fresh parsley
1 tbsp avocado oil
Instructions:
To a large pot add 1 tbsp of avocado oil on medium-high heat.
Once hot, add the diced veggies and sauté about 5-7 min until soft.
Add the seasonings and minced garlic and mix until well incorporated with the veggies. Let it saute for 1-2 more minutes.
Add the flour and mix well. This will absorb all the excess liquid.
Next add the chicken broth, raw chicken breasts, and a couple stems of fresh thyme. Bring to a boil then cover and simmer for about 12-15 min.
Finally, add in the orzo and simmer for about 10 minutes until the orzo is fully cooked.
Remove the chicken from the pot and shred. Then place the chicken back in the soup.
Remove the soup from the heat and add the juice of half a lemon.
Top with freshly chopped parsley and enjoy!
