Ingredients

  • 2 lbs chicken thighs or breasts
  • 1/2 cup soy sauce
  • 1 tbsp honey
  • 2 tbsp brown sugar
  • 1/4 cup rice vinegar
  • 1/4 cup chicken stock
  • 1 tbsp minced garlic
  • 1 tsp ginger powder
  • 1 tbsp cornstarch
Optional toppings
  • Sesame seeds
  • sliced green onions

Instructions

  • Place the chicken thighs in the bottom of the crockpot.
  • In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, chicken stock, minced garlic, ginger powder, and cornstarch.
  • Pour the teriyaki sauce over the chicken. Cover and cook on high for about 2 1/2 hrs or until the chicken is fully cooked.
  • Once the chicken is cooked, shred it using two forks in the slow cooker and give it a good mix.
  • Serve immediately with some rice, and your choice of veggies. Then top with some sesame seeds and sliced green onion. Enjoy!
