2 lbs chicken thighs or breasts 1/2 cup soy sauce 1 tbsp honey 2 tbsp brown sugar 1/4 cup rice vinegar 1/4 cup chicken stock 1 tbsp minced garlic 1 tsp ginger powder 1 tbsp cornstarch Optional toppings Sesame seeds sliced green onions
Place the chicken thighs in the bottom of the crockpot.
In a bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, chicken stock, minced garlic, ginger powder, and cornstarch.
Pour the teriyaki sauce over the chicken. Cover and cook on high for about 2 1/2 hrs or until the chicken is fully cooked.
Once the chicken is cooked, shred it using two forks in the slow cooker and give it a good mix.
Serve immediately with some rice, and your choice of veggies. Then top with some sesame seeds and sliced green onion. Enjoy!
