The pasta soaks up even more of the creamy tomato basil sauce overnight, making leftovers every bit as delicious the next day.

Storing

Store the pasta in an airtight container in the refrigerator for up to 4 days. If you’re meal prepping, you can also store the sauce separately and toss it with freshly cooked pasta when you’re ready to eat.

If you know you’ll have leftovers, slightly undercook the pasta so it doesn’t get too soft when reheated. Fresh basil garnish is best added after reheating.

Reheating

Warm leftovers gently in the microwave or on the stovetop, adding a splash of milk or chicken broth if needed to loosen the sauce. Finish with fresh basil and an extra sprinkle of parmesan before serving.

Crockpot Tomato Basil Chicken Pasta

Creamy, cozy, and packed with Italian-inspired flavor, this Crockpot Tomato Basil Chicken Pasta is one of those easy dinners that tastes like you spent hours making it. It's the perfect slow cooker recipe for busy weeknights, family dinners, or whenever you're craving a comforting bowl of pasta.

Ingredients

  • 2 lbs chicken breasts
  • 1, 28 oz can fire roasted crushed tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup fresh basil chopped
  • 1 tbsp minced garlic
  • 1 tbsp italian seasoning
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 16 oz pasta any kind

Instructions

  • Place the chicken breasts in the bottom of the crockpot.
  • In a mixing bowl, combine crushed tomatoes, chicken broth, heavy cream, parmesan cheese, sun-dried tomatoes, fresh basil, minced garlic, italian seasoning, salt, and pepper. Mix well.
  • Pour the tomato-cream mixture over the chicken in the crockpot and make sure it’s well coated.
  • Cook on high for about 2 1/2 hours or until the chicken is fully cooked.
  • 30 minutes before it’s done, use two forks to shred the chicken in the crockpot.
  • Cook your favorite pasta according to the package instructions then pour into the crockpot and give everything a good mix.
  • Serve immediately with some freshly chopped basil and parmesan cheese. Enjoy!
