Why I love This Recipe
This turkey taco salad is one of my favorite easy, high-protein meals because it’s loaded with fresh ingredients and bold flavor. Seasoned ground turkey is paired with sautéed peppers and onions, creamy homemade guacamole, pinto beans, and crisp mixed greens for the perfect balance of texture and taste. Topped with sharp cheddar, salsa ranch, and crunchy lime chips, this taco bowl is a quick, satisfying, and healthy option for lunch or dinner.
Enjoying The Leftovers
This taco salad is great for leftovers or meal prep. Just store each component separately to keep everything fresh and full of flavor.
Storing:
Store the taco meat, sautéed peppers and onions, and pinto beans in separate airtight containers in the refrigerator for up to 3–4 days. Keep the guacamole in its own tightly sealed container (I love this guacamole saver!), and store the mixed greens, cheese, dressing, and chips separately.
Reheating:
To reheat, warm the taco meat and peppers/onions in a skillet over medium heat for 3–5 minutes or microwave in 30–60 second intervals until heated through. Assemble your bowl with fresh greens, guacamole, cheese, and dressing after reheating for the best texture. Serve with chips on the side for added crunch.

Ground Turkey Taco Salad
Ingredients
- 1 lb ground turkey
- 1 tbsp avocado oil
- 1 taco seasoning packet
For the guacamole
- 2 large avocados
- 5 grape tomatoes, halved
- 1/3 red onion, finely diced
- 1 tbsp cilantro, chopped
- 1/2 lime, juiced
- Garlic powder, to taste
- Salt and pepper, to taste
For the salad
- Mixed greens
- Sharp cheddar cheese
- 1 can pinto beans, drained
- Salsa ranch
- Tortilla chips
- Salsa
- Sour cream
Instructions
- Heat a large skillet over medium heat and add the avocado oil.
- Once hot, add the ground turkey and cook, breaking it up with a spatula, until browned and cooked through.
- Sprinkle in the taco seasoning, add a splash of water if needed, and stir until everything is well coated and flavorful. Remove from the heat and set aside.
- To make the guacamole, add the avocados to a small bowl and mash until you reach your desired consistency. Stir in the grape tomatoes, red onion, and cilantro, then add the juice of ½ a lime along with a sprinkle of salt, pepper, and garlic powder. Mix until well combined, taste, and adjust the seasoning as needed.
- To a bowl, add some mixed greens, taco meat, guacamole, pinto beans, cheddar cheese, your choice of chips, and your dressing.
