Ingredients

  • 1 lb ground turkey
  • 1 tbsp avocado oil
  • 1 taco seasoning packet

For the guacamole

  • 2 large avocados
  • 5 grape tomatoes, halved
  • 1/3 red onion, finely diced
  • 1 tbsp cilantro, chopped
  • 1/2 lime, juiced
  • Garlic powder, to taste
  • Salt and pepper, to taste

For the salad

  • Mixed greens
  • Sharp cheddar cheese
  • 1 can pinto beans, drained
  • Salsa ranch
  • Tortilla chips
  • Salsa
  • Sour cream

Instructions

  • Heat a large skillet over medium heat and add the avocado oil.
  • Once hot, add the ground turkey and cook, breaking it up with a spatula, until browned and cooked through.
  • Sprinkle in the taco seasoning, add a splash of water if needed, and stir until everything is well coated and flavorful. Remove from the heat and set aside.
  • To make the guacamole, add the avocados to a small bowl and mash until you reach your desired consistency. Stir in the grape tomatoes, red onion, and cilantro, then add the juice of ½ a lime along with a sprinkle of salt, pepper, and garlic powder. Mix until well combined, taste, and adjust the seasoning as needed.
  • To a bowl, add some mixed greens, taco meat, guacamole, pinto beans, cheddar cheese, your choice of chips, and your dressing.
