Storing
Store the meatballs and sauce in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months.
Reheating
Reheat gently on the stovetop over medium-low heat or microwave until warmed through. Serve over hearts of palm pasta, traditional pasta, or in a toasted sandwich roll with extra parmesan.

Low Carb Spaghetti and Italian Meatballs
Ingredients
- 1 lb ground beef
- 1 jar of your favorite pasta sauce
- 1/2 cup Italian breadcrumbs
- 1/2 medium onion, finely diced
- 1 tbsp garlic, minced
- 1/2 tbsp Italian seasoning
- 2 large eggs
- 1 tsp salt
- 1/2 tsp pepper
- 1/3 cup parmesan cheese
- 1 tbsp olive oil
- 12 oz Hearts of palm pasta
- Fresh parsley, finely chopped
Instructions
- In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, Italian seasoning, eggs, salt, pepper, and Parmesan cheese. Mix until just combined, then roll the mixture into 1-inch meatballs. You should get about 20 meatballs.
- Heat the oil in a large skillet over medium-high heat. Once hot, add the meatballs and brown them on all sides, about 3-4 minutes per side.
- Pour the pasta sauce into the skillet and gently coat the meatballs. Cover with a lid and reduce the heat to a gentle simmer. Cook for about 10 minutes, or until the meatballs are cooked through. Halfway through cooking, spoon some of the sauce over the meatballs to keep them moist.
- If using hearts of palm pasta, heat a separate skillet over medium heat. Add the noodles along with a spoonful of pasta sauce and cook for about 5 minutes, stirring occasionally, until warmed through. If using traditional pasta, cook according to the package directions.
- Divide the noodles between serving bowls and top with the meatballs and extra sauce. Garnish with freshly chopped parsley and additional grated Parmesan cheese.
