Low Carb Spaghetti and Italian Meatballs

Tender homemade meatballs simmered in a rich Italian pasta sauce make this easy meatball recipe perfect for serving over hearts of palm pasta or your favorite traditional pasta.

Ingredients

  • 1 lb ground beef
  • 1 jar of your favorite pasta sauce
  • 1/2 cup Italian breadcrumbs
  • 1/2 medium onion, finely diced
  • 1 tbsp garlic, minced
  • 1/2 tbsp Italian seasoning
  • 2 large eggs
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/3 cup parmesan cheese
  • 1 tbsp olive oil
  • 12 oz Hearts of palm pasta
  • Fresh parsley, finely chopped

Instructions

  • In a large bowl, combine the ground beef, breadcrumbs, onion, garlic, Italian seasoning, eggs, salt, pepper, and Parmesan cheese. Mix until just combined, then roll the mixture into 1-inch meatballs. You should get about 20 meatballs.
  • Heat the oil in a large skillet over medium-high heat. Once hot, add the meatballs and brown them on all sides, about 3-4 minutes per side.
  • Pour the pasta sauce into the skillet and gently coat the meatballs. Cover with a lid and reduce the heat to a gentle simmer. Cook for about 10 minutes, or until the meatballs are cooked through. Halfway through cooking, spoon some of the sauce over the meatballs to keep them moist.
  • If using hearts of palm pasta, heat a separate skillet over medium heat. Add the noodles along with a spoonful of pasta sauce and cook for about 5 minutes, stirring occasionally, until warmed through. If using traditional pasta, cook according to the package directions.
  • Divide the noodles between serving bowls and top with the meatballs and extra sauce. Garnish with freshly chopped parsley and additional grated Parmesan cheese.
