Storing
Store the chicken, romaine, Caesar dressing, and toppings in separate airtight containers in the refrigerator for up to 4 days. Add the croutons and parmesan just before serving to keep them crisp.
Reheating
Enjoy the chicken cold for a classic Caesar salad, or warm it gently in a skillet or microwave before assembling. Toss the salad with the dressing just before serving.


Marinated Mojito Lime Chicken Caesar Salad
Ingredients
Chicken marinade
- 1 lb chicken thighs or breasts
- 1/4 cup fresh lime juice
- 1/4 cup fresh mint leaves, chopped
- 2 tbsp fresh cilantro, chopped
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp honey
- Salt and pepper, to taste
Salad ingredients
- 4 cups Shredded romaine lettuce
- 1/2 cup caesar salad croutons
- 1/3 cup parmesan cheese, freshly grated
- Your choice of caesar dressing
Instructions
- In a medium bowl, whisk together all of the marinade ingredients. Place the chicken breasts in a zip-top bag or airtight container, pour the marinade over the top, and toss until the chicken is evenly coated. Refrigerate for at least 1 hour, or overnight for even more flavor.
- Heat a large skillet over medium-high heat. Add the chicken along with the marinade and cook for 6-8 minutes per side, or until the chicken is fully cooked. As it cooks, the marinade will reduce and lightly caramelize around the chicken. The exact cook time will depend on the thickness of the chicken.
- Transfer the chicken to a cutting board and let it rest for a few minutes before slicing it into bite-sized pieces.
- To assemble the salad, add the chopped romaine to a large bowl. Top with the sliced mojito lime chicken, croutons, Parmesan cheese, and your favorite Caesar dressing.
