Why I Love This Recipe
This is one of those recipes I end up making on repeat because it’s almost too easy not to. A little chopping, a quick stir, and lunch is ready for the next few days. It’s packed with bright, Mediterranean-inspired flavors, plenty of crunch, and a creamy dressing that somehow gets even better after it’s had a little time to chill in the fridge.

This might actually be one of the rare recipes that’s better the next day. As everything sits together, the dressing soaks into the chicken and vegetables, making every bite even more flavorful.
Storing
Store the salad in an airtight container in the refrigerator for up to 4 days. Give it a quick stir before serving to redistribute the dressing.
When you’re ready to eat
Scoop it into lettuce cups, pile it onto toasted sourdough, wrap it in a tortilla, or serve it over a big bowl of greens. It’s one of those recipes that’s just as good however you decide to eat it.


Mediterranean Chicken Salad
Ingredients
- 3, 12.5 oz canned chicken or rotisserie
- 1/2 small red onion, chopped
- 1 red bell pepper, chopped
- 1/2 cup pepperoncini, sliced
- 1/3 cup katamala olives, sliced
- 1/2 cup banana peppers, sliced
- 3 persian cucumbers, chopped
- 1/2 cup feta cheese
For the sauce
- 1 cup greek yogurt
- 1/4 cup mayo
- 1 small lemon, juiced
- 1 tbsp fresh dill
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
