One Pot Cajun Pasta

We love this one pot cajun pasta. This spicy and satisfying dish that can be whipped up in just 30 minutes!

what you’ll need:

  • 1lb organic andouille chicken sausage

  • 1lb brown rice pasta

  • 1 red bell pepper

  • 1 green bell pepper

  • 1 yellow bell pepper

  • 1 red onion

  • Cajun seasoning

  • Chicken stock

  • Half and half

  • 1 14oz can fire roasted crushed tomatoes

  • Minced garlic

  • Parmesan cheese

  • Salt & pepper

Instructions:

In a large pot or dutch oven add in 1tbs avocado oil on medium high heat. Slice the sausage into pieces and add to the pan. These are already cooked but we are just going to brown them for about 5-7min. Stirring every few min!

Meanwhile sliced your bell peppers and onion. Once the sausage is crispy add in the sliced veggies and 3 tsp cajun seasoning. Sauté for about 3-4 min until slightly tender. Then add in 1tbs of minced garlic and sauté for 1-2 more minutes.

You’ll then add in 3 1/2 cups chicken stock, 1/2 cup half and half, the can of crushed tomatoes, and the box of pasta. Mix well and cover. Turn on high and bring to a boil. Cook for about 9-11 min stirring every few minutes so that the noodles are properly cooked. By the end the liquid will have been soaked up by the noodles and the sauce will have thickened up! You’ll then add in 1/2 cup of fresh parmesan cheese and stir. Add in salt and pepper to taste at the end and serve! Enjoy
