Why I Love This Recipe

Dinner doesn’t get much easier than this. These sheet pan chicken tostadas come together with simple ingredients, take almost no effort to throw together, and still taste like something you’d order from your favorite Mexican restaurant. Everyone can pile on their favorite toppings, which makes them just as fun to eat as they are to make.

Enjoying The Leftovers

These are best enjoyed fresh while the tostadas are nice and crispy, but the leftovers are easy to repurpose for another quick meal.

Storing

These tostadas are best enjoyed fresh while the shells are perfectly crispy and the toppings are vibrant. Because they tend to lose their texture and quality once stored, it’s best to only prepare what you plan to eat right away.

If you do have leftovers, you can store the toppings separately in airtight containers in the refrigerator. When you’re ready to eat, simply place the toppings onto a new tostada shell for the best texture and flavor.

For the best experience, I still recommend enjoying them straight from the oven whenever possible.

Sheet Pan Chicken Tostadas

Ingredients

  • 1 pack of Guerrero Tostadas
  • 1 lb of precooked chicken
  • 1 packet of taco seasoning
  • 1 can refried beans
  • 8 oz shredded sharp cheddar cheese
Optional toppings
  • Guacamole
  • Sliced grape tomatoes
  • Diced red onion
  • Sour cream
  • Freshly chopped cilantro
  • Hot sauce

Instructions

  • Preheat the oven to 400℉.
  • In a large bowl add the chicken and shred. Next, add about 1/2 a packet of taco seasoning and mix well.
  • Line a baking sheet with foil then add the tostadas. I could only fit 6 on at once so if you want to make more you’ll have to make it in a couple of batches.
  • Heat the refried beans in a microwave-safe bowl for about 2 minutes. This will allow it to spread more easily on the tostadas.
  • Add some refried beans, chicken, and grated cheese to each tostada.
  • Place in the oven for about 5 minutes until the cheese is melted. Broil for the last minute or so to get it nice and crisp.
  • Remove from the oven and serve. Top with your choice of toppings. I topped them with guacamole, sliced tomatoes, diced red onion, sour cream, and chopped cilantro. Enjoy!
