Need a dinner that's fast, filling, and guaranteed to be a hit? These Sheet Pan Chicken Tostadas are loaded with seasoned chicken, refried beans, and melty cheese, then finished with all your favorite fresh toppings for an easy weeknight meal the whole family will love.
In a large bowl add the chicken and shred. Next, add about 1/2 a packet of taco seasoning and mix well.
Line a baking sheet with foil then add the tostadas. I could only fit 6 on at once so if you want to make more you'll have to make it in a couple of batches.
Heat the refried beans in a microwave-safe bowl for about 2 minutes. This will allow it to spread more easily on the tostadas.
Add some refried beans, chicken, and grated cheese to each tostada.
Place in the oven for about 5 minutes until the cheese is melted. Broil for the last minute or so to get it nice and crisp.
Remove from the oven and serve. Top with your choice of toppings. I topped them with guacamole, sliced tomatoes, diced red onion, sour cream, and chopped cilantro. Enjoy!
