Shrimp Stir Fry

The sweet teriyaki flavor with a kick from the sriracha mayo is the perfect combo! This can easily be changed to low carb by switching out the rice for cauliflower rice or some extra veggies.

what you’ll need:

  • 1lb shrimp

  • 1 cup shredded carrots

  • 1 cup red cabbage

  • 1/2 small onion

  • 1 cup mushrooms

  • 1 cup brown rice

  • 1/3 cup teriyaki sauce (I like primal kitchen)

  • Green onion chopped

  • 3tbs mayo

  • 2tbs sriracha

  • avocado oil

Instructions:

Preheat and large pan or wok with 1 tbs avocado oil on medium high heat. Add in your cabbage, shredded carrot, chopped onion, and mushrooms. Saute everything for about 5-7 min until everything becomes soft.

Meanwhile in a separate pan add in 1 tbs of avocado oil on medium high heat. Season your shrimp with salt & pepper then add to the pan. Sear on both sides for about 2-3 min per side. You’ll then add in your shrimp to the wok with the other veggies along with 1 cup of cooked rice and 1/3 cup teriyaki sauce. You can add more sauce if you’d like! Mix everything together well.

To make the sriracha mayo just mix together 3tbs of mayo and 2tbs of sriracha.

Place your serving into a bowl then top with some sriracha mayo and chopped green onions & enjoy!!

*I also included some cooked broccoli into this, which is optional!
