Skillet Chicken Parmesan

what you’ll need:
1lb chicken breast
1 cup Italian style Pork rind crumbs (panko bread crumbs if not doing low carb)
Marinara Sauce
2 eggs
1 large mozzarella cheese ball
1 cup parmesan cheese
Fresh basil
1 tbs italian seasoning
1 tbs garlic powder
Salt & pepper
Olive oil or avocado oil
Instructions:
Preheat your oven to 350 degrees.
Start by cutting your chicken breasts in half lengthwise so it makes 4 thin pieces then set aside.
Then grab two seperate bowls. I like to use flat wide bowls. To one bowl add in two eggs and whisk them. To the other bowl add in 1 cup italian style pork rind crumbs, 1/2 cup parmesan cheese, 1 tbs italian seasoning, 1 tbs garlic powder, 1/2 tsp salt, and 1/2 tsp pepper. Mix this together well.
You’ll then dip your chicken breast in the eggs on both sides then let the excess drip off. Move the chicken to the breadcrumb bowl laying it flat into the mixture on both sides so it becomes evenly coated.
To a oven safe skillet or cast iron place 1 tbs oil on medium high heat.
Once hot add your chicken breasts and cook about 2-3 minutes per side. Once browned remove them from the pan. To the bottom of the cast iron add 1/2 cup marinara sauce, then add back in your chicken. Top with sliced mozzarella cheese and 1/2 cup of parmesan cheese.
Bake for about 25 mintues until the chicken is fully cooked.
Once removed from the oven top with the freshly chopped basil and enjoy!
