Why I Love This Recipe

There’s something about a cheesy, cozy casserole that always ends up on repeat in my house, especially when it’s all made in one pot. The rice cooks right in the flavorful broth, the beef makes it extra hearty, and the smoked gouda melts into the dreamiest layer on top. It’s an easy dinner that feels like comfort food from the very first bite.

Enjoying The Leftovers

This casserole reheats really well, making it a great option for lunches or easy dinners later in the week. The flavors continue to deepen overnight, and it’s just as delicious served on its own or with a simple side salad.

Storing

Store leftovers in an airtight container in the refrigerator for up to 4 days. If you’d like to freeze it, let the casserole cool completely before transferring it to a freezer-safe container for up to 3 months.

Reheating

Reheat individual portions in the microwave or warm the casserole in a 350°F oven until heated through. Add a splash of broth if needed to loosen the rice, and sprinkle on a little extra smoked gouda before serving if you have some on hand.

Ingredients

  • 1 lb ground beef
  • 1 tbsp avocado oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp ground mustard
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup uncooked long grain rice, rinsed
  • 2 cups beef broth
  • 1 cup crushed tomatoes
  • 1/4 cup heavy cream
  • 2 cups shredded smoked gouda
  • Freshly chopped chives for garnish

Instructions

  • Preheat a Dutch oven to medium-high heat and add the avocado oil. Once hot, add the ground beef and cook for 7-10 minutes until fully cooked.
  • Once the beef has cooked, add the diced onion and minced garlic. Saute for 1-2 minutes until the onions are soft and the garlic is fragrant.
  • Next, add the smoked paprika, onion powder, ground mustard, thyme, salt, and black pepper, then mix. Cook for 1-2 minutes.
  • Add the crushed tomatoes, beef broth, and heavy cream.
  • Stir in the uncooked rice. Bring to a simmer, cover, and reduce heat to low. Let cook for 15-18 minutes until the rice is tender, stirring occasionally so the rice doesn’t stick to the bottom.
  • Once the rice has cooked, top it with gouda cheese and place it in the oven at 400 degrees for 5-7 minutes until it the cheese has melted and is nice and bubbly.
  • Top with freshly chopped chives and serve immediately. Enjoy!
