Why I Love This Recipe
This is my go-to meal when I want something quick, filling, and packed with flavor without turning on the stove for more than a few minutes. The creamy sriracha tuna, warm brown rice, crisp cucumber, edamame, and avocado come together to make a bowl that feels fresh, satisfying, and way more exciting than your average pantry meal. Finish it with green onions, sesame seeds, and an extra drizzle of sriracha, and you’ve got a lunch or dinner that’s as easy as it is delicious.
Enjoying The Leftovers
This bowl comes together so quickly that it’s perfect to prep the ingredients ahead and assemble whenever you’re ready to eat.
Storing:
Store the rice, spicy tuna mixture, edamame, cucumber, and avocado in separate airtight containers in the refrigerator for up to 2 days. For the freshest flavor, slice the avocado just before serving if possible.
Reheating:
Enjoy the bowl chilled or warm the rice before assembling. Top with green onions, sesame seeds, and an extra drizzle of sriracha just before serving.
