Strawberries & Cream Chia Seed Pudding

I love making Chia Seed pudding to have as a meal prepped breakfast! They are so versatile and you can change up the flavors every time you make it.

what you’ll need:

  • 1/4 cup chia seeds

  • 1 cup coconut milk (not canned)

  • 1 tbs maple syrup

  • 2 heaping tbs yogurt

  • 1 scoops vanilla protein powder of choice (optional, this just adds more protein)

  • 1 tsp vanilla

  • 3 strawberries

    Toppings:

  • Strawberries

  • Shredded coconut

  • Greek or coconut yogurt

Instructions:

To a blender add in

1 cup cup coconut milk (or milk of choice), 1tbs maple syrup, 2 scoops of Greek yogurt, 1tsp of vanilla, 3 large strawberries, and a serving of your protein powder of choice. Blend well.

Once blended add it to a jar, then add in 1/4 cup chia seeds. Close with a lid and shake really well.

Let this sit overnight. The next morning pour your chia seed pudding into a bowl and add fresh strawberries, a dollop of yogurt, and some coconut flakes (optional but it makes it pretty!)
