Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 1 tbsp maple syrup
  • 2 tbsp yogurt
  • 1 scoop vanilla protein powder
  • 1 tsp vanilla
  • 6 strawberries

  • Shredded coconut

Instructions

  • Add the coconut milk, maple syrup, Greek yogurt, vanilla, strawberries, and protein powder to a blender. Blend until smooth and creamy.
  • Pour the mixture into a jar or airtight container. Add the chia seeds, seal with a lid, and shake well until the chia seeds are evenly distributed.
  • Refrigerate overnight, or for at least 4 hours, to allow the chia seeds to thicken into a pudding.
  • Give the pudding a good stir before serving. If it's thicker than you'd like, stir in a splash of milk until it reaches your desired consistency.
  • Top with fresh strawberries, a dollop of Greek yogurt, and coconut flakes, if desired. Enjoy!
