Super Easy Classic Chicken Salad

This chicken salad recipe is perfect to make in bulk and use in wraps, salads, or even eat it on it’s own! We love to make this on the weekends to make for easy weekday lunches.

what you’ll need:

  • 2lbs chicken breast

  • 1 red bell pepper

  • 2 celery sticks chopped

  • 1/2 cup green onion chopped

  • 3/4 cup mayo

  • 1/4 cup dijon mustard

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

Instructions:

Start by prepping your chicken. I like to use my instant pot but you can opt for cooking it in the oven if you’d like!

In the instant pot I added my chicken breast with 1 cup of water and cooked it on the poultry setting. Don’t worry about adding the seasoning, this will come later!

Once the chicken is done either shred by hand, in a blender, or with a mixer. I like to use a mixer since it’s the quickest option.

Next add in one chopped bell pepper, sliced celery, 1/2 cup green onion, 3/4 cup mayo, 1/4 cup dijon mustard, 1 tsp salt, 1 tsp pepper, & 1 tsp garlic powder. Mix well.

Serve it on a salad, in a wrap, or eat it on it’s own! Enjoy!
