These Bacon Cheddar Egg Bites are an easy, high-protein breakfast made with eggs, cottage cheese, crispy bacon, and sharp cheddar cheese. They're fluffy, flavorful, perfect for meal prep, and an easy grab-and-go breakfast for busy mornings or a satisfying snack any time of day.
Place the bacon in an even layer on a foil-lined baking sheet. Bake for 15-20 minutes until crispy. Remove from the oven and let them cool a bit. Place on a paper towel to remove the excess grease. Add the bacon to a cutting board, chop it into bacon bits, and then set aside.
Turn down the oven to 350℉.
Add the eggs, 1/2 cup cheddar cheese, cottage cheese, hot sauce, and seasonings in a blender. Blend on high for about a minute until fully smooth.
Lightly grease a muffin tin and pour in the egg mixture. Filling it just over halfway full.
Evenly distribute the bacon bits into each egg bite and top with the shredded cheddar cheese.
Bake for 25-30 minutes until a toothpick comes out clean and the tops are slightly browned.
