These are one of those recipes I almost always have in my fridge because they make busy mornings so much easier. They’re packed with protein, easy to reheat, and actually keep me full until lunch. The combination of crispy bacon, sharp cheddar, and fluffy eggs makes them feel a lot more exciting than your average meal prep breakfast.

These egg bites were made for meal prep. Make a batch at the beginning of the week and you’ll have an easy breakfast or snack ready whenever you need it.

Storing

Store the egg bites in an airtight container in the refrigerator for up to 5 days. They also freeze well for up to 2 months if you’d like to make a double batch.

Reheating

Warm the egg bites in the microwave for 20 to 30 seconds, or until heated through. If reheating from frozen, thaw them overnight in the refrigerator or add a little extra time in the microwave.

Bacon Cheddar Egg Bites

These Bacon Cheddar Egg Bites are an easy, high-protein breakfast made with eggs, cottage cheese, crispy bacon, and sharp cheddar cheese. They're fluffy, flavorful, perfect for meal prep, and an easy grab-and-go breakfast for busy mornings or a satisfying snack any time of day.

Ingredients

  • 10 eggs
  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1 tbsp hot sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 12 pack of bacon
Topping
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat the oven to 400℉.
  • Place the bacon in an even layer on a foil-lined baking sheet. Bake for 15-20 minutes until crispy. Remove from the oven and let them cool a bit. Place on a paper towel to remove the excess grease. Add the bacon to a cutting board, chop it into bacon bits, and then set aside.
  • Turn down the oven to 350℉.
  • Add the eggs, 1/2 cup cheddar cheese, cottage cheese, hot sauce, and seasonings in a blender. Blend on high for about a minute until fully smooth.
  • Lightly grease a muffin tin and pour in the egg mixture. Filling it just over halfway full.
  • Evenly distribute the bacon bits into each egg bite and top with the shredded cheddar cheese.
  • Bake for 25-30 minutes until a toothpick comes out clean and the tops are slightly browned.
