This Chocolate Chia Pudding is a healthy, no-cook dessert made with cocoa, almond milk, and maple syrup. Topped with raspberries and chocolate, it’s a rich, make-ahead treat packed with fiber and flavor.

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup chia seeds
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • pinch of sea salt

Optional toppings

  • Coconut whipped cream
  • Fresh raspberries
  • Lily's unsweetened dark chocolate chips

Instructions

  • In a jar or airtight container, combine the almond milk, chia seeds, cocoa powder, maple syrup, vanilla, and sea salt. Stir or shake really well until everything is fully combined. Make sure there aren't any clumps of chia seeds, otherwise they won't soak evenly.
  • Cover and refrigerate overnight, or for at least 6 hours, until the mixture has thickened into a pudding.
  • Give the pudding a good stir before serving, then top with your favorite toppings. I love mine with coconut whipped cream, dark chocolate chips, and fresh raspberries.
