Why I Love This Recipe

When I’m craving something chocolatey, this is one of the first recipes I reach for. It has a rich, creamy texture that feels like dessert, but it’s made with simple ingredients you can prep ahead of time. Top it with coconut whipped cream, fresh raspberries, and a few dark chocolate chips, and you’ve got a treat that’s every bit as satisfying as it is easy to make.

Enjoying The Leftovers

Having a jar of this waiting in the fridge always feels like a little win.

Storing

Store the chocolate chia pudding in an airtight container or individual jars in the refrigerator for up to 5 days. Wait to add the whipped cream, raspberries, and chocolate chips until just before serving for the best texture.

When you’re ready to eat

Give the pudding a quick stir before serving, then top with coconut whipped cream, fresh raspberries, dark chocolate chips, or any of your favorite toppings.

Ingredients

  • 1 cup unsweetened vanilla almond milk
  • 1/4 cup chia seeds
  • 2 tbsp unsweetened cocoa powder
  • 1 tbsp maple syrup
  • 1 tsp vanilla
  • pinch of sea salt
Optional toppings
  • Coconut whipped cream
  • Fresh raspberries
  • Lily’s unsweetened dark chocolate chips

Instructions

  • In a jar or airtight container, combine the almond milk, chia seeds, cocoa powder, maple syrup, vanilla, and sea salt. Stir or shake really well until everything is fully combined. Make sure there aren't any clumps of chia seeds, otherwise they won't soak evenly.
  • Cover and refrigerate overnight, or for at least 6 hours, until the mixture has thickened into a pudding.
  • Give the pudding a good stir before serving, then top with your favorite toppings. I love mine with coconut whipped cream, dark chocolate chips, and fresh raspberries.
