Ingredients

  • 1 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 1/2 tbsp vanilla
  • 1/4 cup coconut flour
  • 1/2 cup almond flour
  • Pinch of sea salt
  • 1 1/4 cup Lily's sugar free dark chocolate chips, divided
  • 2 tbsp coconut oil

Instructions

  • Line an 8x8 baking pan with wax paper and set aside.
  • In a large bowl, mix together the peanut butter, maple syrup, vanilla, coconut flour, almond flour, a pinch of sea salt, and 1/4 cup of the Lilly's dark chocolate chips.
  • Flatten the cookie dough down into a single layer and add to the freezer for about 10 min while you melt the chocolate.
  • For the chocolate glaze mix the remaining chocolate chips and 2 tbsp coconut oil in a bowl and microwave for 20 seconds then stir. Repeat until the chocolate is fully melted.
  • Pull the dough out of the freezer and put the chocolate glaze on top and a sprinkle of sea salt. Freeze for a few hours until everything is solid. (Mine took about 3-4 hours)
  • Remove from the baking pan and cut into 12 equal chunks.
